This Chimichurri Pesto brings together the herby brightness of chimichurri with the rich, savoury depth of a traditional pesto. Think punchy parsley, sharp garlic, tangy vinegar, and a smooth olive oil base - perfect for swirling through pasta, dolloping on eggs, slathering over toast, or spooning straight from the jar.
Made for solo diners but dangerously shareable.
