Cauliflower Gnocchi with Wild Mushroom & Truffle Oil Pesto

Ingredients (Serves 2)
- Olive oil
- 1 pack of Sunny & Luna cauliflower gnocchi
- 1 jar of The Saucerer Wild Mushroom & Truffle Oil Pesto
Finishing touches:
- Parmesan or vegan cashew parm
- Chili flakes
- Black pepper
- Parsley
Method
- Drizzle a bit of olive oil into a pan and heat it up.
- Add the entire packet of Sunny & Luna cauliflower gnocchi to the pan. Pan-fry for 5-6 minutes, until they’re crispy on the outside and soft in the middle.
- Pour in the entire jar of The Saucerer Wild Mushroom & Truffle Oil Pesto. Gently stir for 1-2 minutes, until everything is warmed through and well-coated.
- Optional: Top with Parmesan, chilli flakes, black pepper, or some fresh parsley.
